I have always loved stuffed peppers. This recipe is a slightly different take on the traditional stuffed pepper. This recipe is 3 points per serving for Weight Watchers. This recipe is core if you use fat free ingredients. Ingredients:
2 medium green peppers |
1/2 lb lean ground beef |
2 tablespoons onions, chopped |
1 (16 ounce) can kidney beans, rinsed and drained |
1 (8 ounce) can tomato sauce |
3 tablespoons taco seasoning |
1/4 cup cheddar cheese, shredded |
1/4 cup tomato, chopped |
Directions:
1. Cut peppers in half lenghtwise and remove seeds. 2. Cook in boiling water for 5 minutes; drain and set aside. 3. In a large skillet, cook beef and onion over medium high heat until meat is no longer pink; drain. 4. Add beans, tomato sauce and taco seasoning, bring to a boil. 5. Reduce heat and simmer, uncovered, for 5 minutes. 6. Place pepper halves in an ungreased 8 inch square pan. 7. Fill with meat mixture. 8. Bake, uncovered, for 10 minutes or until peppers are tender. 9. Top with sour cream, tomato, and cheese. |
