This almost-homemade soup is super easy and easily customizable to your family's taste buds. Perfect for a cool evening after a busy day. Ingredients:
1 lb. ground meat (i use turkey) |
2 t. your favorite taco seasoning (omit if using pre-seasoned meat) |
1 can your favorite canned chili (i use campbell's roadhouse) |
1 can petite diced tomatoes |
1 small can sliced black olives (drained) |
1 can (or 2 c. frozen) corn (drained) |
1 c. water |
1/2 c. diced onions (opt.) |
serve with: tortilla chips, sour cream, guacamole, grated cheese (opt.) |
Directions:
1. Brown ground meat (with onions if using them) and drain if needed. Stir in water, seasoning, tomatoes, chili, olives & corn. Bring to a boil, reduce heat and simmer covered at least 15-20 minutes. Serve with tortilla chips. Don't forget sour cream, guacamole and/or grated cheese on top! 2. This soup also works well with venison. You can also substitute 1/3 - 1/2 of the tomatoes for your favorite salsa to turn up the heat. |
