Taco Soup - Family Favorite |

This recipe was given to me at a Weight Watchers meeting (1 cup = 2 pts.). It has become one of my family favorites. We love it for leftovers and it's also good to freeze for later. Ingredients:
1 lb lean ground beef |
1 onion |
2 celery |
1 green bell pepper |
2 (1 1/4 ounce) packages taco seasoning |
2 cups water |
1 (2 ounce) package hidden valley ranch dressing mix |
1/2 teaspoon chili powder |
1/2 teaspoon cumin |
1/2 teaspoon dried cilantro |
2 (15 ounce) cans chopped tomatoes |
1 (15 ounce) can corn |
1 (15 ounce) can pinto beans |
1 (15 ounce) can black beans |
Directions:
1. In medium stock pot, cook lean ground beef on medium high heat until browned. Drain beef and add onion, celery and bell pepper, saute until tender. Add taco spice and 2 cups of water cook about 15 minutes. Add ranch dressing mix, chile powder, cumin, cilantro, 2 cans tomatoes, corn and beans. Simmer 35 min on low. |
