Tasty soup for a cold night. A soup you can make when you do not have much time to cook!
Ingredients:
1-2 lbs ground beef or turkey
1 med chopped onion
1 envelope taco seasoning mix
1 reg envelope of ranch salad dresing mix
2 10oz cans tomatoes w/ chilies
4 c. canned tomatoes, crushed or diced (i use 28 oz can)
1 can pinto beans (undrained)
1 can kidney beans (undrained)
1 can corn ( i use 11oz can vacuum packed)
cheese for top of each serving
Directions:
1. Using a 4-5 qt pan, brown meat, and rinse w/ water to discard fat. If using lean meat, not necessary to drain.
2. Add onion and finish browning.
3. Stir in the two dry mixes
4. Add everything else.
5. Heat to serving temperature and enjoy. I usually simmer for about 10 min.
