Easy leftovers can be easily frozen and reheated a real chill chaser for the upcoming cold winter nights.
Ingredients:
2 pounds ground beef
1 large onion chopped
1 4.5 oz can chopped green chilies
1 14 oz can corn
2 14 oz cans pinto beans
3 14 oz cans diced tomatoes
1 1.25 oz package taco seasoning mix
1 1.25 oz package dry ranch style dressing mix
2 and 1/2 cups water
if you prefer it really spicy 2 hot peppers of your choice chopped
Directions:
1. Brown the gound beef and onion together in a large soup pot
2. drain the grease well and return to the soup pot
3. add all the other ingredients and mix well
4. bring to a gentle boil over medium to high heat
5. reduce heat and simmer for 30 minutes
6. terrific with a nice crusty garlicky bread and salad
