Something I like to make during the winter, it's kind of a different twist to Chili. Great with cornbread too. Ingredients:
1 lb. ground beef |
1 envelope taco seasoning mix **(see note) |
1 (46oz) can tomato juice |
1 (16oz) pkg. frozen mixed vegetables |
1 (15oz) can chili beans |
crushed corn chips |
shredded cheddar cheese |
**note: i like to use the chi-chi's fiesta restaurante seasoning mix found in most grocery store's.(except for ours, thankfully my mil mails big shipments to us) we use it for this soup and in our regular taco/burritos. it won't leave the meat with the greasy red tint. and when used for making taco/burrito's your mixture won't drip out of your shells, leaving the red/oily drops on your plate or oops! your clothes. it's just a great dry taco seasoning. |
Directions:
1. In a large pot, brown the ground beef, then drain. 2. Return beef to pot, add the taco seasoning, tomato juice, vegetables and chili beans. 3. Mix well. 4. Bring to a boil, then reduce heat and simmer for 20 to 25 minutes, or until veggies are tender, stirring occasionally. 5. Serve in bowls topped with the crushed corn chips and cheese. |
