A very tasty and low calorie soup for those cold winter days. Great fiber count too! Ingredients:
1 onion, diced |
2 cloves garlic |
1 lb beef, extra lean, trimmed to no fat |
1 28 oz. tomatoes, diced |
400 grams beans, black |
1 1/2 cup kernel corn |
2 tsp ground cumin |
1/2 tsp ground turmeric |
Directions:
1. slice beef into small thin strips like you would for fajitas 2. brown with onion and garlic 3. add cumin and turmeric 4. add tomatoes, black beans and corn and heat thru for one hour. 5. Top with shredded cheese if you have to, and some crushed low cal tortilla chips. 6. 8 servings |
