Simple and delicious! Just throw it all in the pot and dinner is served! We freeze leftovers and then reheat with sour cream for a festive dip. Ingredients:
1 (20 ounce) package lean ground turkey |
1/2 medium onion, chopped |
3 garlic cloves, minced |
1 (14 1/2 ounce) can kidney beans |
1 (14 1/2 ounce) can black beans |
1 (14 1/2 ounce) can pinto beans |
3 (14 1/2 ounce) cans diced tomatoes (or petite) |
1/4 cup taco seasoning |
black pepper |
hot sauce |
Directions:
1. In a large pot, brown turkey over medium high heat. 2. add onion, garlic and sautee until soft, about 3 minutes. 3. add beans, tomatoes, taco seasoning to turkey mix and combine well. 4. black pepper and hot sauce can be added to taste. 5. bring soup to a boil. 6. cover and lower heat to simmer for about 30 minutes. 7. serve with cheese, sour cream, tortilla chips, or cornbread. |
