A variation on a Weight Watchers favorite. This soup is easy, very flavorful, and filling. Ingredients:
5 cups beans, canned (pinto, chili hot beans, kidney beans, whatever you prefer) |
1 1/2 cups corn, drained |
1 1/2 cups tomatoes, crushed |
8 ounces chopped frozen spinach (one box) |
1/2 cup vegetable broth |
Directions:
1. Mix all ingredients in a large pot. Add one package of taco seasoning mix. Heat over a low flame. Serve as is, or mix in some fat free sour cream, jalepenos, or tomato salsa. |
