This dish is great! Easy to make. I do however leave the jalapenos out of the recipe b/c of my 2 young boys. Even if doubled or tripled the recipe...would make a great dish for that special occasion. Don't forget the tortilla chips!!! Ingredients:
2 lbs lean ground beef |
3 tablespoons safflower oil |
2 jalapenos, seeded diced |
1 spanish onion, diced |
2 cups tomatoes, peeled, seeded, diced |
3 cups beef broth |
2 cups v8 vegetable juice |
1 tablespoon cumin |
1 tablespoon chili powder |
1 teaspoon salt |
1 1/2 cups cheddar cheese |
tortilla chips |
Directions:
1. In a dutch oven or a large kettle, fry the beef in the oil. Add the peppers and onion. Saute until tender. 2. Add tomatoes, broth, juice and seasonings. Bring to a boil. Reduce heat and simmer f or 15 minutes. 3. Pour soup into bowls, garnish with tortillas and cheese and serve. |
