I got this recipe from a co-worker. It is so good, healthy and very filling.
Ingredients:
1 lb 93% lean ground beef
1 large onion
1 (1 ounce) package ranch dressing mix
1 (1 ounce) package taco seasoning mix
1 (15 ounce) can black beans
1 (19 ounce) can red kidney beans
1 (10 ounce) can rotel tomatoes
1 (11 ounce) can whole kernel corn
1 (14 ounce) can reduced-sodium fat-free beef broth
Directions:
1. Brown meat along with onion. Add all remaining ingredients and simmer for approximately 1 hour. Serve with baked tortilla chips or crackers.
