i found out too late that i didn't potatoes for soup, but i had already pulled out my broth. i remembered i had taco meat in the freezer, so i looked for taco soup recipes. all the recipes i found called for taco seasoning-which i didn't have. i made this from scratch, without a recipe! it was really yummy, so try it and give me some feedback.. :) Ingredients:
1 tablespoon extra virgin olive oil |
1 lb ground beef (i had left over taco meat in my freezer) |
1 green pepper, chopped |
1 onion, chopped |
3 teaspoons cumin |
2 teaspoons dried chili pepper flakes |
1 teaspoon salt |
1 teaspoon cilantro |
2 teaspoons cayenne pepper |
6 cups beef broth |
1 quart canned tomato |
2 soft taco-size flour tortillas |
1 cup cheddar cheese, grated |
1 cup sour cream |
Directions:
1. *because i already had my taco seasoning, change the amount of seasonings according to your taste*. 2. heat oil in pan. 3. add cooked beef, green pepper, onion and spices. 4. if using home canned tomatoes, cut into smaller, bite-sized pieces. (i used my hand mixer inside the jar) add tomatoes into a pot with the beef broth. 5. add beef mixture. 6. cut tortillas in small rectangular pieces (about 1 x2 ) and add to soup. 7. add cheese and sour cream. |
