This is soooo quick and easy to make! It's absolutely delicious to eat as is or with chips, cheese and sour cream. My mother-in-love made it for us just after we brought home our first baby. So, I've got two reasons to love it: it's a great soup, and it reminds me of 2 wonderful people...my mother-in-law and my beautiful child. Ingredients:
1 lb ground beef |
1 medium onion, chopped |
1 can kidney bean |
1 can black beans |
1 can ranch style bean |
1 can creamed corn |
1 can pinto beans |
1 can navy beans |
1 can rotel |
1 can tomato |
1 package ranch dressing mix |
1 package taco seasoning mix |
water |
grated cheddar cheese |
sour cream |
Directions:
1. Brown ground beef with onion in 6 qt. 2. stock pot. 3. Add Rotel, tomatoes, ranch mix, taco mix, ranch style beans and cream corn to beef and onion. 4. Drain and add remaining cans of beans. 5. Add 2 cans of water. 6. Stir together and simmer for 10 minutes. 7. Serve over crushed tortilla chips. 8. Garnish with grated cheese and a dallop of sour cream. |
