Taco Sheppard's / Shepherd's Pie |

This pie is very flavorful with taco seasoning and salsa in the ground meat and cheesy mashed potatoes. Ingredients:
1 1/2 lbs ground beef |
0.5 (1 1/2 ounce) package taco seasoning |
8 ounces salsa |
2 (3 1/2 ounce) packages hungry jack cheesy homestyle easy mashed potatoes |
1 (16 ounce) package frozen mixed vegetables |
1 cup cheddar cheese, shredded (i used mexican blend) |
Directions:
1. Brown ground beef and drain, return to pan. 2. Add taco seasoning and salsa, stir to combine. 3. Prepare mashed potatoes as directed on package. 4. In a casserole dish, layer first a thin layer of mashed potatoes. 5. Next add half of the ground beef mixture, then half the frozen vegetables. 6. Sprinkle 1/2 cup of cheese on top of the vegetables. 7. Next layer again, potatoes, beef mixture, vegetables and cheese. 8. Top with a final layer of mashed potatoes. 9. Cover with foil and bake at 350 for 30 minutes. |
