A simple skillet meal that is full of flavor but low in calories and fat. I found this recipe in Kraft Food & Family magazine. I have not tried this recipe, but I'm posting it for safe keeping. Ingredients:
2 tablespoons kraft light done right reduced fat zesty italian dressing |
1 lb pork tenderloin, cut into strips |
1 ounce taco bell home originals taco seasoning, divided (1 envelope) |
1 cup red pepper, cut into strips |
1 cup green pepper, cut into strips |
1 cup zucchini, cut into strips |
2 cups minute brown rice, uncooked |
1 3/4 cups water |
1/2 cup kraft 2% reduced-fat sharp cheddar cheese, shredded |
Directions:
1. Heat dressing in large skillet on medium-high heat. Add pork; sprinkle with half of the seasoning mix. Stir-fry 2 minutes. 2. Add vegetables, rice, water and remaining seasoning mix; mix well. 3. Bring mixture to boil. Reduce heat to medium; cover. Simmer 5 minutes. Sprinkle with cheese; cover. Let stand 5 minute. |
