adapted from Gooseberry Patch.. What's For Dinner cookbook....can substitute reduced fat/calorie ingredients...Garnish with your favorite items...sour cream, chopped green onion...hot peppers, salsa etc.. Ingredients:
8 ounces corn muffin mix |
1 1/4 ounces taco seasoning |
1 lb ground beef, browned, drained |
1/2 cup salsa |
1 cup cheddar cheese, shredded |
Directions:
1. Prepare corn muffin mix according to pkg directions - 2. spread in a greased 8x8 baking pan - 3. Bake at 400* for 6-8 minutes. 4. blend 1/2 pkg of taco seasoning mix into beef, reserving remaining mix for another recipe - 5. add any additional ingredients, according to. 6. taco seasoning mix directions - reducing each by half - 7. remove cornbread from oven and spread with taco sauce - 8. Top with beef mixture and cheese. 9. Return to oven, continue baking 15 minutes - longer or until cheese is melted. 10. Let stand 2-3 minutes, cut into squares to serve. 11. garnish as desired. |
