This is from the 2006 Quick Cooking Annual Recipes. It goes together quickly...great for a hot summer night
Ingredients:
2 cups uncooked spiral shaped pasta
1 lb ground beef
1 (1 1/4 ounce) envelope taco seasoning
3 cups shredded lettuce
2 cups halved grape tomatoes
1 cup shredded cheddar cheese
1/2 cup chopped red onion
1/2 cup chopped green pepper
1/2 cup catalina dressing
tortilla chips
Directions:
1. Cook pasta according to package directions.
2. Meanwhile, in a skillet, cook beef over medium heat until no longer pink; drain.
3. Stir in the taco seasoning; cool.
4. Drain pasta and rinse in cold water; stir into meat mixture. Add the lettuce, tomatoes, cheese, onion, green pepper and dressing; toss to coat. Serve with tortilla chips.
