This is from the 2006 Quick Cooking Annual Recipes. It goes together quickly...great for a hot summer night Ingredients:
2 cups uncooked spiral shaped pasta |
1 lb ground beef |
1 (1 1/4 ounce) envelope taco seasoning |
3 cups shredded lettuce |
2 cups halved grape tomatoes |
1 cup shredded cheddar cheese |
1/2 cup chopped red onion |
1/2 cup chopped green pepper |
1/2 cup catalina dressing |
tortilla chips |
Directions:
1. Cook pasta according to package directions. 2. Meanwhile, in a skillet, cook beef over medium heat until no longer pink; drain. 3. Stir in the taco seasoning; cool. 4. Drain pasta and rinse in cold water; stir into meat mixture. Add the lettuce, tomatoes, cheese, onion, green pepper and dressing; toss to coat. Serve with tortilla chips. |
