I came up with this recipe because I had extra meatball mixture so I added some things I had laying around, and it became a southwestern meatloaf! Yummy! Ingredients:
1 1/2 lbs ground turkey |
1 (4 ounce) can green chilies |
1 (4 ounce) can chopped black olives |
3 eggs, beaten |
1 1/2 cups breadcrumbs |
1 teaspoon minced garlic clove |
1 (10 ounce) can red enchilada sauce |
Directions:
1. Mix together turkey, chilies, olives, eggs, breadcrumbs, garlic, and half the can of enchilada sauce with hands. Form into a loaf and place in 9 by 13 inch baking dish. Pour rest of enchilada sauce over top of loaf. Bake at 350 for 30 - 40 minutes until meat is brown. |
