Easy recipe for a crowd. I am always asked to share this recipe.
Ingredients:
1-2 pounds of ground beed (i used 1.5)
1-2 packages of taco seasoning mix ( i used 1.5)
3 cloves garlic minced
water (according to taco mix directions)
flour to dust dish
2 packages flour tortilla (10-12 each)
1 (24 ounce) jar salsa
1 cup sliced green onions
16 ounces sour cream mixed with 1 tbs chili powder
4 cups montery jack/ cheddar cheese blend
Directions:
1. Preheat oven to 375
2. Brown beef and drain well
3. Add garlic taco seasoning, and water to beef
4. Simmer uncovered 10 minutes
5. Sprinkle flour on bottom of 9X13 pan
6. Place 6 tortillas on bottom of pan overlapping and extending up sides slightly
7. Layer in following order:
8. 1 Cup salsa
9. !/2 meat mixture
10. 1/2 cup green onions
11. 1/2 sour cream mixture
12. 1/3 of cheese
13. Repeat layer one more time
14. Top with tortilla layer and remaining salsa
15. Bake for 40 minutes
16. Remove top with remaining cheese and bake 10 more minutes
17. Let stand 10 minutes before serving.
18. Note you may also use cornmeal and corn tortillas instead of flour
