I absolutely LOVE THIS! Great flavors. Recipe courtesy of Better Homes and Gardens. Ingredients:
1 lb ground beef |
1/2 cup onion, chopped |
8 ounces tomato sauce |
1/3 cup water |
1 1/4 ounces taco seasoning mix |
2 eggs |
1 cup milk |
16 ounces red kidney beans, drained |
1 1/2 cups monterey jack cheese, shredded |
10 taco shells (2 1/2 cups) or 10 tostadas, coarsely crushed (2 1/2 cups) |
1 cup lettuce, shredded |
1/2 cup monterey jack cheese, shredded |
1 small tomato, chopped |
1/4 cup olive, sliced and pitted |
Directions:
1. In large skillet cook ground beef and the onion until beef is browned. 2. Drain off excess fat. 3. Stir in tomato sauce, water, and taco seasoning mix into meat mixture and heat through. 4. Remove from heat. 5. Beat eggs and stir in milk. 6. Add a small amount of the tomato sauce mixture to the egg mixture, stirring constantly. 7. Return all to skillet. 8. Stir in kidney beans, the 1 1/2 cups Monterey Jack cheese, and the crushed taco or tostado shells. 9. Turn into a 12x7x2 inch baking dish. 10. Bake in a 350 oven about 30 minutes. 11. Top with lettuce, 1/2 cup cheese, tomato, and olives. 12. Let stand 5 to 10 minutes before cutting into squares. 13. Makes 6 servings. |
