From the book, Church Suppers. This batter makes a cornmeal pancake for any Mexican or Tex-Mex meat filling. Ingredients:
1/2 cup cornmeal |
1 cup flour |
1/4 teaspoon salt |
1 1/2 cups water |
1 egg |
Directions:
1. Beat together. 2. Pour onto a hot griddle, and spread out with a fork, making each the size of a pancake. 3. Fry until golden brown. 4. Fill with your taco meat, etc. |
