this dish puts a kick into your taste buds, after eating this , you may never go back to a regular salad. Serve with lettuce along side your favorite dip Hommus or shish kabobs or just eat with a pita bread as a small snack.
Ingredients:
3 large bunches parsley .
1/2 cup fine crushed burghul
4 green onions
1/4 cup fresh mint (optional) or
2 tbsp of driied mint
3 large tomatoes (diced small)
salt to taste
white pepper to taste
1/2 cup freshly juiced lemon or to taste
1/3 cup olive oil or to taste
romaine lettuce or pita pockets
Directions:
1. Wash Parsely well. wash the parsley night before and wrap in a towel , place in fridge, this will take out excess moisture.
2. DO NOT WASH BURGHUL
3. Using a large salad bowl, place the crushed Burghul with all the seasoning and mix.
4. Add diced Tomatoes to seasoned Burghul, mix, this will help with the soaking of the Burghul.
5. Chop Onions and also add to mixture.
6. Remove stems from the Parsley and discard, chop parsley very fine or as fine as you would like, add to mixture.
7. Add mint If using dried or chop fresh mint and add.
8. Toss, then add Lemon and Olive Oil and mix well.
9. Taste, add more seasoning or lemon if needed.
10. Refrigrate for 10 minutes.
11. Serve on a bed of Romaine Lettuce or In a Pita Pocket with Hommus.
12. Enjoy.
