This is a hearty Middle Eastern salad with wonderful subtle flavors Ingredients:
4 cps boiling water |
2 cps bulgar wheat |
1 tsp salt |
1 cp minced parsley |
1/4 cp minced fresh mint leaves |
4 tomatoes seeded and diced |
1 cucumber peeled and diced |
1/4 cp fresh lemon juice |
1/4 cp olive oil |
1/4 cp chopped black olives |
Directions:
1. Bring water to a boil 2. add salt 3. add bulgar 4. let stand about 15 minutes or untill all water has been absorbed 5. fluff with fork and place in large bowl 6. add parsley and mint leaves 7. add olives, tomatoes and cucmbers 8. mix well 9. combine olive oil and lemon juice 10. wisk with fork and pour over bulgar mixture. 11. fluff with fork and refrigerate at least 1 hour. Serve on lettuce leaves. 12. This salad is exceptionally good with roast lamb. |
