Tabule, (pronounced : TA-BOO- LEE), is a very common salad in Lebanese or middleeastern cooking . Its main ingredient is Groats, (crushed Oats), which is used in many middle eastern recipes. My version has earned me many WOWs from my Guests. Read more . Tell me if it does the same for you. Groats is also called Bourghul and can be found at stores that carry Health Food or Vegetarian stores Ingredients:
1 cup of groats. (you can use couscous or quinoa as well) |
1 package of parsley. (it might seem like a lot but it's not). |
1 package of mint leaves |
2 medium tomatoes |
juice of one lemon |
1/4 cup extra virgin olive oil |
2 teaspoons salt |
Directions:
1. Pour Groats into a bowl and cover with boiling water . 2. Let stand for about 1/2 hr to enable Groats to absorb water 3. Finely chop Tomatoes and Parsley and Mint 4. Pour off excess water from Groats. 5. Mix all ingredients together. 6. Let all the tastes blend for at least an hour before serving. 7. Serve chilled |
