Ingredients:
1 cup bulgar wheat, dry
2 cups boiling water
1 1/2 teaspoons salt
1/4 cup lemon juice
1 teaspoon garlic
1/2 teaspoon mint, fresh
1/4 cup olive oil
salt and pepper, to taste
1/4 cup scallion, chopped (including greens)
2 tomatoes, diced
1 cup parsley, chopped
1/2 cup chickpeas, canned
1 cucumber, chopped
Directions:
1. Cook bulgur wheat.
2. When it is done, add lemon juice, garlic, oil, mint, salt and pepper, and mix thoroughly. Refrigerate 2-3 hours.
3. Just before serving, add the vegetables and mix.
