From the Moosewood cookbook. Ingredients:
1 cup bulgar wheat, dry |
2 cups boiling water |
1 1/2 teaspoons salt |
1/4 cup lemon juice |
1 teaspoon garlic |
1/2 teaspoon mint, fresh |
1/4 cup olive oil |
salt and pepper, to taste |
1/4 cup scallion, chopped (including greens) |
2 tomatoes, diced |
1 cup parsley, chopped |
1/2 cup chickpeas, canned |
1 cucumber, chopped |
Directions:
1. Cook bulgur wheat. 2. When it is done, add lemon juice, garlic, oil, mint, salt and pepper, and mix thoroughly. Refrigerate 2-3 hours. 3. Just before serving, add the vegetables and mix. |
