2 cups bulgur wheat |
1 cup fresh parsley, finely snipped |
1/3 cup lemon juice |
1/2 cup olive oil |
1/2 cup green onion, sliced |
2 teaspoons mint, snipped |
2 tomatoes, chopped |
lettuce leaf |
Directions:
1. Soak bulgar wheat in 2 cups hot water, lemon juice and oil for one hour. Stir in everything else, except the lettuce. Chill. Serve on lettuce-lined salad plates. |
