This is one of my favorite summer dish. I make a lot and take it to work for lunch. You can change the quantities of the vegetables and inovate! Ingredients:
150 g couscous (uncooked) |
1 kg tomatoes |
3 onions |
2 cucumbers |
1 handfull of mint leaves |
juice of 3 lemons |
salt |
optional: raisins |
Directions:
1. Cut the vegetables in small cubes and add salt. 2. Mince the mint. 3. In a large bowl put everything and mix (do not cook the couscous!) 4. Cover and fridge for 12 hours. 5. Enjoy! |
