This came to me as a whimsical twist to a family favorite. Tabbouleh is a dish rich in nutrition yet light. Ingredients:
1-cup organic bulgur wheat |
2 cups water |
1-cup flat leaf parsley rough chopped |
one cup chopped romaine lettuce |
one cup chopped baby spinach |
one medium size tomato diced |
one mango peeled and diced |
juice of one lemon |
pinch of salt |
1-teaspoon olive oil |
Directions:
1. In a medium bowl, rehydrate the bulgur wheat with the water.. 2. Add all the ingredients and let sit covered in the refrigerator for and hour. 3. Serve with pita bread or pita chips. |
