A wonderful, refreshing salad or vegetarian main dish. Ingredients:
1 cup bulgar |
1-2/3 cup boiling water |
1/2 cup extra virgin oliveoil |
1/3 cup fresh lemon juice |
1/2 cup thinly sliced green onions |
1/2 cup chopped flat leaf parsley |
1/3 cup fresh mint, thinly sliced |
3 tomatoes, seeded and chopped |
1 english cucumber, peeled and diced in 1/2 cubes |
salt and pepper to taste |
Directions:
1. Boil water and pour over bulgar in salad bowl. Cover with plastic wrap and let set for 1 hour. Combine olive oil, lemon juice until emulsified. Pour over bulgar. Add green onions, parsely, mint, tomatoes and cucumber. Toss to combine and season with salt and pepper. Cover and refrigerate for at least 2 hours until chilled. |
