This goes with the Vegetarian Koftas recipe. I like it better than other tabboulehs because there is less onion and leafy stuff in it.
Ingredients:
1 1/3 cups bulgur wheat
2 tablespoons lemon juice
1 tablespoon olive oil
6 tablespoons chopped parsley
4 scallions, finely chopped
1 cucumber, finely chopped
2 tablespoons chopped mint
1 large tomato, finely chopped
Directions:
1. Soak the bulgur wheat in 13/4 cups boiling water for 15 minutes.
2. Combine with remianing ingredients.
3. Cover and chill.
