This goes with the Vegetarian Koftas recipe. I like it better than other tabboulehs because there is less onion and leafy stuff in it. Ingredients:
1 1/3 cups bulgur wheat |
2 tablespoons lemon juice |
1 tablespoon olive oil |
6 tablespoons chopped parsley |
4 scallions, finely chopped |
1 cucumber, finely chopped |
2 tablespoons chopped mint |
1 large tomato, finely chopped |
Directions:
1. Soak the bulgur wheat in 13/4 cups boiling water for 15 minutes. 2. Combine with remianing ingredients. 3. Cover and chill. |
