This salad recipe is one of my all time favourites!!! It is very nutritious.
Ingredients:
1-1/2 cups bulgur
3 tomatoes, seeded and diced into small pieces
2 cucumbers, peeled and again diced into small pieces
3 green onions, sliced
3 cloves garlic, minced
1-1/2 cups fresh parsley, finely chopped
1/3 cup fresh mint leaves (this is optional if not readily available or in season)
2 teaspoons natural sea salt, purchased from either a middle eastern store or health store.
1/2 cup lemon juice freshly squeezed
2/3 cup extra virgin olive oil
note: i also add finely chopped red onion to this salad but it is not necessary.
Directions:
1. Place cracked wheat in a bowl and cover with 2 cups of boiling water.
2. Soak covered for 30 minutes.
3. Drain and squeeze out excess water.
4. In a mixing bowl, combine bulgar, tomatoes, cucumbers, onions, garlic, parsley, mint, salt, lemon juice, and olive oil.
5. Toss and refrigerate for at least 4 hours before serving.
6. Toss again before serving.
