This salad recipe is one of my all time favourites!!! It is very nutritious. Ingredients:
1-1/2 cups bulgur |
3 tomatoes, seeded and diced into small pieces |
2 cucumbers, peeled and again diced into small pieces |
3 green onions, sliced |
3 cloves garlic, minced |
1-1/2 cups fresh parsley, finely chopped |
1/3 cup fresh mint leaves (this is optional if not readily available or in season) |
2 teaspoons natural sea salt, purchased from either a middle eastern store or health store. |
1/2 cup lemon juice freshly squeezed |
2/3 cup extra virgin olive oil |
note: i also add finely chopped red onion to this salad but it is not necessary. |
Directions:
1. Place cracked wheat in a bowl and cover with 2 cups of boiling water. 2. Soak covered for 30 minutes. 3. Drain and squeeze out excess water. 4. In a mixing bowl, combine bulgar, tomatoes, cucumbers, onions, garlic, parsley, mint, salt, lemon juice, and olive oil. 5. Toss and refrigerate for at least 4 hours before serving. 6. Toss again before serving. |
