This is an Americanized version of the traditional tabbouleh recipe and is more bulgur wheat and less parsley. Ingredients:
1 cup boiling water |
1/2 cup lemon juice |
1 cup bulgur |
2 tbsp olive oil |
1 1/2 cups chopped tomato |
1/2 tsp. salt |
1 cup chopped fresh mint |
1/2 tsp garlic powder |
3/4 cup minced fresh parsley |
1/8 tsp ground red pepper |
1/2 cup chopped cucumber |
1/8 tsp black pepper |
1/3 cup sliced green onions |
Directions:
1. Combine bulgur and water in large bowl cover and let stand 5 to 10 minutes or until bulgur is tender and water is absorbed. 2. Add tomato, chopped mint, parsley, cucumber, and green onions; toss well. 3. Combine lemon juice and next 5 ingredients in a small bowl; stir well with a wire whisk. 4. Drizzle lemon juice mixture over bulgur mixture; toss well. Transfer to a serving bowl. Garnish with fresh mint, if desired. |
