Ingredients:
4 cups fresh parsley |
1/4 cup fresh mint |
2 cups cucumbers, diced and seeded |
2 cups tomatoes, diced and seeded |
1 cup bulgur, uncooked |
3/4 cup onion, diced |
1/3 cup lemon juice |
2 tablespoons olive oil |
1/2 teaspoon salt |
1 clove garlic, minced |
Directions:
1. Place parsley and mint in a food processor; process until finely minced. 2. Combine parsley mixture, cucumber, and remaining ingredients in a large bowl; toss well. 3. Cover and marinate in refrigerator at least 4 hours. |
