chicken for salad Ingredients:
8 ounce chicken breasts, boneless, skinned |
1/4 c pecans, finely chopped |
1/4 c corn flakes, crushed |
1/2 tsp salt |
1/2 c milk |
1 egg, beaten |
1/2 c all-purpose flour |
1/4 c canola oil |
Directions:
1. Pound checken fillet to 1/2 inch thick 2. combine: 1/4 C pecans, 1/4 C corn flakes,1/2 tsp salt 3. combine: beaten egg and milk 4. All-purpose flour in shallow bowl 5. Bread each chicken breast by coating each in flour 6. Dip flour-dusted checken in egg mixture then coat with coating of pecans and cornflakes 7. Saute chicken fillets 3 to 4 minutes per side in preheated canola oil 8. cool 9. cover and refrigerate 2 hours |
