Great spicy fresh salad. To make spicier add more chilies. Also does well with more noodles and more seaweed. Recipe from Green Cuisine Cookbook, 2006 Ingredients:
1 cup bean thread noodles |
1 3/4 cups water |
1/4 head bok choy, finely cut |
1/4 cup bean sprouts |
1/3 cup carrot, shredded |
1 cup watercress, chopped |
1/4 cup red pepper, finely diced |
1/4 cup arame seaweed, soaked |
1 tbsp toasted sesame oil |
1/2 tbsp dried chilies |
1/2 tsp salt |
Directions:
1. Soak the arame seaweed in ice cold water for 10 minutes if dry. 2. Boil the noodles for 10 minutes, drain and cool under cold water. Then chop into smaller pieces. 3. Mix the noodles with the vegetables and add the seasonings. |
