Not sure where I found this recipe - have had it in my recipe files for years. Ingredients:
2 cups dried apricots |
1 cup golden raisin |
2 cups rice |
1/2 cup butter |
1 cup onion, minced |
1/2 bell pepper, chopped |
1/2 teaspoon curry powder |
1 cup almonds, toasted |
salt and pepper |
Directions:
1. Cover apricots & raisins with water and soak for 30 minutes. Cook rice according to package instructions. 2. Preheat oven to 375 degrees F. In a skillet, melt butter and saute onion, bell pepper and curry. Add almonds & the drained & chopped apricots, raisins and cooked rice. Correct seasonings as desired. Place mixture in a greased baking dish and bake for 30 minutes. |
