My friend's Grandmother came to Calif. from Syria, and this is her recipe. A Perfect dish for summer. The one hour cook time does not include refrigeration time. Ingredients:
1 chicken |
1 cup rice, uncooked |
1 cup celery, minced |
2 bunches scallions, chopped finely '12 green onions |
2 small packages almond slivers-toasted 1/2 to 1 cup nuts |
1small jar roasted red peppers or pimento--about 1/3 cup roasted red peppers, julienned |
mayonnaise-- my skinny friend throws in lots of mayo, and i use as little as possible. (the pimento jar has juice) |
Directions:
1. Boil the chicken until tender; bone and shred. refrigerate. I cook the chicken with onion, carrot, celery, sage, thyme, rosemary. 2. Cook the 1 cup of rice according to your directions; refrigerate. 3. When all is prepped, combine all the ingredients and mix together well. 4. I suggest cooking the rice and the chicken a day ahead of serving it. Good for guests. everybody likes, even kids. |
