Swordfish With Kiwi Salsa |

Taken from my local supermarket magazine, put here for safe keeping. Salsa can also be used on chicken or halibut. Ingredients:
1 kiwi fruit, peeled and diced |
1 small yellow bell pepper, diced |
1/2 small red onion, diced |
1 jalapeno pepper, seeded and finely chopped |
1 teaspoon lime zest, grated |
3 tablespoons fresh lime juice |
1/4 teaspoon sea salt |
1/3 cup cilantro, chopped |
1/2 teaspoon ground cumin |
1/4 teaspoon fresh ground black pepper |
2 teaspoons canola oil |
4 swordfish steaks |
Directions:
1. In a large bowl, toss together kiwi, bell pepper, onion, jalapeno, lime zest and juice, salt and cilantro. Set aside. 2. In a small bowl, mix together cumin and black pepper. Set an oven rack about 6 inches from the heating element and preheat the broiler. 3. Brush oil on both sides of swordfish steaks and sprinkle each side with the cumin mixture. Place fish on a rimmed baking sheet and broil for 5 minutes. Turn and broil until opaque in the center, another 4 to 5 minutes. 4. Place swordfish steaks on 4 plates and top each with kiwi salsa. |
