Taken from my local supermarket magazine, put here for safe keeping. Salsa can also be used on chicken or halibut.
Ingredients:
1 kiwi fruit, peeled and diced
1 small yellow bell pepper, diced
1/2 small red onion, diced
1 jalapeno pepper, seeded and finely chopped
1 teaspoon lime zest, grated
3 tablespoons fresh lime juice
1/4 teaspoon sea salt
1/3 cup cilantro, chopped
1/2 teaspoon ground cumin
1/4 teaspoon fresh ground black pepper
2 teaspoons canola oil
4 swordfish steaks
Directions:
1. In a large bowl, toss together kiwi, bell pepper, onion, jalapeno, lime zest and juice, salt and cilantro. Set aside.
2. In a small bowl, mix together cumin and black pepper. Set an oven rack about 6 inches from the heating element and preheat the broiler.
3. Brush oil on both sides of swordfish steaks and sprinkle each side with the cumin mixture. Place fish on a rimmed baking sheet and broil for 5 minutes. Turn and broil until opaque in the center, another 4 to 5 minutes.
4. Place swordfish steaks on 4 plates and top each with kiwi salsa.
