Easy recipe for a weekday's dinner, made with swordfish steaks and a red pepper, garlic, tomato and almond sauce. Delicious! Ingredients:
12 ounces swordfish (2 steaks thawed) |
3 tablespoons almonds (slivered) |
2 cloves garlic (peeled) |
5 basil leaves (fresh) |
4 teaspoons extra virgin olive oil |
1 medium tomato (coarsely chopped) |
1/2 cup roasted red peppers |
1/8 teaspoon salt |
1/8 teaspoon black pepper |
Directions:
1. Place almonds, garlic, basil leaves and 2 teaspoons of oil in a food processor. Process until finely chopped. 2. Add tomatoes and red peppers. Process until smooth. 3. Preheat a large sauté pan on medium high. 4. Season the swordfish with the salt and pepper. 5. Add the remaining 2 teaspoons of oil to the pan and coat it well. 6. Cook fish 3 minutes on one side without turning it. Reduce the heat to medium and turn the fish. 7. Add the sauce to the pan and cook for about 2-4 minutes or until fish meat easily separates with a fork. 8. Best served with fresh steamed veggies and brown rice. |
