Now this sounds like another great fajita. A tasty filling meal in one combo. Quick and easy to make, so compact you can eat it on the run. Enjoy this lovely treat. Ingredients:
4 wheat flour tortillas, soft |
1 tablespoon vegetable oil |
1 large onion, sliced |
1 red bell pepper, sliced |
1 yellow bell pepper, sliced |
1 lb swordfish, cut into 1/2 inch cubes |
2 tablespoons pesto sauce, prepared |
1 tomato, diced |
1 avocado, peeled, sliced and diced |
Directions:
1. Heat oil in heavy, large skillet over Medium-High heat. 2. Saute the fish until almost cooked through, about 5 minutes. 3. Add onions and peppers and saute until tender. 4. Remove from heat and stir in pesto. 5. Spoon seafood mixture into tortillas. 6. Top with tomato and avocado, fold tortillas over. 7. Serve warm. |
