Very good and easy! The V8 marinade gives it great flavor. Ingredients:
3 lbs top round steaks, 1 1/2 inch thick |
2 cups v8 vegetable juice |
1 tablespoon basil |
4 cloves minced garlic |
1 medium onion, chopped |
1 1/2 tablespoons olive oil |
2 cloves minced garlic |
1 medium onion, chopped |
3 large tomatoes, chopped |
1/2 cup flat leaf parsley, chopped |
salt & pepper |
1 teaspoon sugar |
Directions:
1. Prepare the marinade with the V-8, basil, garlic and one onion and place it and the steak in a large zip-lock bag and refrigerate overnight. 2. Remove and discard marinade. 3. Pat dry. 4. In large dutch oven, brown in olive oil about 4 min. 5. per side over med/high heat. 6. In sauce pan, saute the remaining onion& garlic for about 2 minutes. 7. Add tomatoes, parsley, sugar and salt& pepper. 8. Cook in 400 degree oven for 25 minutes uncovered, stir, cover duch oven and cook an additional 25 minutes. |
