SWISS SPINACH PATTIES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cashion Estate in Terrell, Texas in 1996. Ingredients:
10 ounces frozen spinach thawed and squeezed |
3/4 cup dry cottage cheese |
1/2 cup finely crushed pork rinds |
1/2 cup grated parmesan cheese |
1/4 cup mayonnaise |
2 eggs beaten |
1/4 teaspoon salt |
1/8 teaspoon freshly ground black pepper |
2 tablespoons olive oil |
1/2 cup shredded swiss cheese |
Directions:
1. In medium bowl combine all ingredients except oil and Swiss cheese then mix well. 2. Shape mixture into 6 patties. 3. Heat oil in large skillet over medium heat then cook patties 5 minutes on each side. 4. Top with cheese then serve immediately. |
