Chicken enchilada recipe that is not to hard to prepare and really good. Ingredients:
1 chopped onion |
2 tbsp oil |
1 crushed garlic clove |
8oz tomato sauce |
4oz green chilies (drained and chopped) |
2 cups cooked chicken (chopped) |
salt, pepper and cavender's seasoning to taste |
1 cup sour cream |
1 cup chicken broth |
1 cup heavy cream |
12 flour tortillas |
1/2 lb graded monterey jack cheese |
Directions:
1. Saute onion in oil 2. Add garlic, tomato sauce chilies, chicken and seasonings to taste 3. Mix sour cream, chicken broth and cream in a separate bowl 4. Dip tortillas in cream mixture 5. Spoon chicken mixture on tortilla, roll and place in baking dish 6. Repeat for each tortilla 7. Pour remaining sauce over top of enchilladas 8. Top with grated cheese 9. Bake at 350 for 30 minutes covered in foil 10. Remove foil and cook until browned |
