Great side dish. Ingredients:
1 egg, slightly beaten |
2 (15 1/4 ounce) cans sweet whole kernel corn, drained |
1 (5 ounce) can evaporated milk |
2 tablespoons chopped onions |
1/2 teaspoon salt |
1/8 teaspoon black pepper |
1 cup shredded swiss cheese |
1/2 cup soft breadcrumbs |
1 tablespoon butter, melted |
Directions:
1. Preheat oven to 350*. 2. Lightly grease 2-quart baking dish; set aside. 3. In large bowl stir together egg, corn, milk, onion, salt and pepper. 4. Stir in 3/4 cup of the cheese. 5. Spoon into prepared baking dish. 6. In medium bowl combine bread crumbs, butter and remaining 1/4 cup cheese. 7. Sprinkle over corn mixture. 8. Bake for 25 to 30 minutes or until golden brown and the center jiggles slightly. 9. Let stand for 10 minutes before serving. |
