Swiss Cheese & Spinach Quiche |

This is a tasty quiche that I found in a magazine. Ingredients:
pastry dough, for one single crust pie (store bought or homemade) |
4 slices bacon, diced |
1/4 cup chopped onion |
1/4 cup chopped sweet red pepper |
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry |
4 eggs (or 2 cups egg substitute) |
1/2 cup cottage cheese |
1/4 cup shredded swiss cheese |
1/2 teaspoon dried oregano |
1/4 teaspoon dried parsley flakes |
1/4 teaspoon salt |
1/4 teaspoon pepper, and |
1/4 teaspoon paprika |
6 tablespoons sour cream |
Directions:
1. On a lightly floured surface, unroll pastry and transfer to a 9-inch pie plate. 2. Trim pastry to 1/2 inch beyond the edge of the plate and flute edges. 3. Line unpricked pastry with a double thickness of heavy duty aluminum foil. 4. Bake at 450 for 8 minutes, remove foil and bake for another 5 minutes. 5. Cool on a wire rack and reduce the oven to 350. 6. In a small skillet cook the bacon, onions and red pepper until the veggies are tender and drain. 7. Stir in the spinach. 8. Spoon spinach mixture into pastry. 9. In a small bowl, combine the eggs, cottage cheese, Swiss cheese and seasonings. 10. Pour over spinach mixture. 11. Bake for 35 - 40 minutes or until a knife inserted near center comes out clean. 12. Let rest for 10 minutes before cutting. 13. Serve with sour cream. |
