SWISS CHEESE AND SMOKED SALMON QUICHE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hewitt Estate in Tulsa, Oklahoma in 1994.
Ingredients:
1 cup smoked salmon
1/2 cup mayonnaise
1/2 cup milk
2 eggs
1 tablespoon cornstarch
1 1/2 cups swiss cheese grated
1/3 cup green onions finely chopped
1/3 cup celery
1/4 teaspoon white pepper
1/4 teaspoon paprika
9 inch pastry shell
Directions:
1. Blend mayonnaise, milk, eggs and cornstarch then stir in salmon, cheese, onions and pepper.
2. Pour into 9 pastry shall and bake at 350 for 35 minutes.
