The February, 2009 Good Housekeeping magazine issued this recipe as a side dish; however, it could easily serve as a main dish as far as I'm concerned. You decide!
Ingredients:
1 large bunch (1 1/4 pounds) swiss chard, washed and trimmed
1 tablespoon olive oil
1 small onion, chopped
1/4 cup golden raisins
salt to taste
2 tablespoons pignoli nuts (pine nuts), toasted
Directions:
1. Cut ribs and stems from chard, cut in 1/2 pieces and set aside.
2. Cut leaves into 2 pieces and place in colander to drain.
3. In Dutch oven heat oil on medium heat.
4. Add onion and chard ribs/stems.
5. Cook until tender stirring occasionally, 7 to 9 minutes.
6. Add drained chard leaves, raisins and 1/4 teaspoon salt.
7. Cover and cook 2 to 3 minutes OR until leaves are tender.
8. Remove Dutch oven from heat and stir in pignoli.
