This is a really old method of cooking swiss chard. It is very tasty. We serve this with boiled potatoes, and a mixture of apple cider vinegar, water and a little sugar, for sprinkling over. Prep time does not include soaking the meat overnight. Ingredients:
1 lb lean salt pork |
1 bunch swiss chard |
Directions:
1. Soak salt meat overnight in cold water. 2. Drain off water. 3. Put meat in a large pot with enough water to cover it. 4. Cook 1 hour. 5. Add swiss chard to pot and cook 45 minutes longer or until swiss chard and meat are tender. 6. Drain off water and serve. |
