this is so good in the morning warm with coffee
Ingredients:
first you make the muesli
1 1/2 cups old-fashioned oats
1 1/2 cups water
2 cups shredded unpeeled apples (granny smith)
1 1/2 cups or 9 oz. pitted prunes, chopped
2 tablespoons honey
2 tablespoons lemon juice
1/2 tsp. cinnamon
mix together and refrigerate overnight. i put my quartered and cored apples (3) in food processor with prunes and chop them together.
Directions:
1. Then in the morning mix together the bread. You have enough Muesli to make this following recipe twice.
2. 1 1/2 cup packed brown sugar
3. 1/2 cup vegetable oil
4. 2 eggs
5. 1 tsp. vanilla
6. 2 cups Muesli
7. 1 1/2 cups flour
8. 1/2 tsp. salt
9. 1 tsp. soda
10. 1/2 tsp. nutmeg
11. 3/4 cup chopped walnuts
12. Preheat oven to 350 degrees. Grease 9x5 inch loaf pan and sprinkle bottom and sides with oats.
13. In a mixing bowl, beat sugar, oil, eggs, and vanilla. Stir in 2 cups Muesli. Blend in remaining ingredients.
14. Mix until just well-blended. Pour into prepared loaf pan.
15. Bake 55-60 minutes until pick inserted comes out clean.
16. Cool in pan 15 minutes, then loosen edges and turn out on a rack and cool.
