Swiss and Spinach Stuffed Mushrooms |

none of the others i found were quite what i was looking for, this is what i came up with instead. Ingredients:
16 cremini mushrooms, med sized, stems removed |
1/3 cup onion, minced |
2 garlic cloves, minced |
1/3 cup spinach, chopped, i use thawed frozen |
1 cup swiss cheese, shredded |
1/2 teaspoon salt |
1/4 teaspoon black pepper |
1 tablespoon olive oil |
Directions:
1. saute the onions and garlic in a little olive oil, set aside to cool. 2. squeeze out the thawed spinach really well, shred the cheese, stem the mushrooms and set open side up on a cookie sheet drizzled with olive oil. 3. mix all but mushrooms and stuff by hand (spoons are an exercise in frustration here), this will help put a light coating of oil on the outside of the mushrooms as well. 4. i set these in the fridge for a few hours till dinnertime but i don't think the chilling is really necessary. bake at 375 for 15 min. |
